Making khoya (Mawa) at home from scratch is a lengthy process and demands patience. I tried alternate ways to prepare khoya quickly using home ingredients and the outcome was pretty close to real khoya. Try any of these 2 recipes, step by step, and you can make rich and creamy khoya at home with very little effort with taste and texture like real khoya. These recipes use condensed milk, and ricotta cheese as the main ingredient.

  • 12 oz condensed milk

  • 2 tsp ghee

  • 30 oz ricotta cheese

  • 1 tbsp ghee

Directions Recipe 1

  • Mix all ingredients in a microwavable bowl.
  • Whisk it well until combined.
  • Put the bowl in the microwave and cook for about 3 minutes. Do not step away.
  • Take it out (be careful the bowl will be very hot) and mix using a spatula.
  • Mixture will look slightly dark, crumbly, sticky and gooey at this point. Allow it to rest overnight and it will thicken.

  • Take a heavy bottom pan, add ricotta cheese and put it on medium heat.
  • Heat for about 3 to 4 minutes while continuing to stir. You will see bubbles forming in the mix.
  • Use the big spoon and continue to stir until the moisture starts to evaporate.
  • Add ghee and mix very well. Put off the flame.
  • Wait for the mix to thicken in the pan.
