I love to make this delicious curry! It’s very colorful and appealing, and my family also enjoys it when I serve this curry.

Ingredients

  • 4 medium carrot, washed and peeled

  • 1 cup peas

  • 2 green chillies-finely chopped

  • ½ inch ginger-finely chopped

  • ½ tsp amchoor powder

  • ½ tsp garam masala

  • 1 tsp turmeric powder

  • 1 tsp cumin seeds

  • ⅓ tsp hing

  • 2 tsp coriander powder

  • 1 tsp red chili powder

  • Salt to taste

  • 2 tbsp oil

Directions

  • Cut the carrots into small pieces.  
  • Start the gas on medium heat and put the fry pan on it.
  • Add oil and wait until hot.
  • Add cumin seeds and hing and wait until the seeds crackle.
  • Add the peas and carrots and stir.
  • Add turmeric powder and salt and mix. Then, close the lid for about 2 minutes.
  • Add the red chilli powder, green chillies, and coriander powder, then stir and close the lid for about 3 minutes or until the carrots are almost tender (don’t overcook).
  • Now, add amchoor powder and garam masala. Mix and close the lid for about 2 minutes.
  • Garnish with coriander leaves.
  • Enjoy with chapatis or parathas!
