This rice is perfect for a low carb diet or if you are trying to get your kids to eat their vegetables! You don’t even realize it isn’t rice. Enjoy this quick and tasty dinner recipe! Add any protein to make a complete meal

Ingredients

  • 2 cups frozen riced cauliflower or grated cauliflower (keep it a little thick)

  • 2 tbsp sesame oil

  • 1 pack (6 oz) tofu – cut in cubes (or any meat)

  • 1 onion – finely chopped

  • ½ cup peas

  • ½ cup broccoli – cut in small pieces

  • 2 tbsp soy sauce

  • 1 tsp salt or to taste

  • 1 tsp black pepper or to taste

  • ½ tsp garlic salt

  • 1 medium size red bell pepper – cut in small slices

  • ½ cup mushroom – sliced

  • 2 small carrots – sliced

  • For garnish – cilantro and lemon

Directions

  • Add oil to a pan and put on medium heat. Add tofu and stir every 3 seconds and fry each side. Keep aside.
  • Add onions with a little salt and wait for a minute. If required, add oil.
  • Add carrots and cook for a minute, then add the rest of the vegetables.
  • Once the vegetables are cooked, add the cauliflower.
  • Add soy sauce, salt, pepper, and tofu.
  • Cover for about 2-3 minutes.
  • Garnish with cilantro and lemon.
  • Enjoy!
