Dhaba style Butter Dal with Tandoori Roti

Dal roti is a staple food in North India.  It is a wholesome food, and usually people eat it for  dinner or lunch. Dhabas are roadside restaurants and dal roti is the most famous and popular dish there. Dhabas serve dals with tandoori roti (flatbread made with whole wheat and traditionally cooked in tandoor (cylindrical clay oven) hence the name tandoori).  It’s almost always served with some ghee or butter on top. 

Dal roti is fairly easy to make and I tried making tandoori rotis at home (using a toaster instead of the usual tandoor) and it came out pretty well. All the ingredients are typically available at home.

Ingredients

  • For Tandoori Roti

  • Makes 8 small size rotis

  • 2 cups whole wheat atta

  • 1 tsp salt

  • 1 tsp carom seeds

  • ghee for roasting or butter

  • For daal

  • ¼ cup chana dal

  • ¼ cup moong dal (or toor dal)

  • 1 onion – finely chopped

  • 1 tomato – finely chopped

  • 2 tbsp fresh cilantro – chopped

  • 1 green chilli – chopped (optional)

  • ½ tsp ginger – finely chopped

  • 3 tbsp butter

  • 2 tsp red chilli powder + 1 tsp red chilli powder for garnish

  • 2 tsp salt (or to taste)

  • 2 tsp turmeric powder

  • 1 tsp cumin seeds

  • ½ tsp hing asafoetida

Directions

  • Add dal to a bowl and wash 3-4 times.
  • Transfer dal to a pressure cooker and about 2 medium glasses of water (or as you like).
  • Add salt and turmeric powder, close the lid and put on medium heat for about 15-20 minutes (or wait for 3-4 whistles, if using a pressure cooker). Turn off the heat and keep aside. Do not open cooker and let the steam release by itself
  • Heat 2 tbsp butter in a frying pan and wait for about 15 seconds. Add cumin seeds and wait until they crackle. Add hing and wait for about 5 seconds and then add chopped onions.
  • Fry for 2 to 3 minutes. Add ginger and green chilli. Stir the mix and add red chilli powder.
  • Add tomatoes and wait for about a minute. Too much cooking is not needed at this stage.
  • Now open the pressure cooker and mash dal a bit with a big spoon.
  • Transfer the onion mixture to dal and add additional salt as your taste. Stir to mix everything.
  • Cook for an additional 10-15 minutes on slow heat.
  • Heat 1 tbsp butter in another frying pan, wait for about 20 seconds and add 1 tsp red chilli powder. Mix chilli into butter and wait for about 10 seconds and use the mix to garnish dal. Additionally garnish with cilantro
  • Use kashmiri mirchi instead of red chilli powder if you don’t want it spicy.
  • Add additional butter to the dal to make it taste better.
  • Tandoori Roti
  • Take a wide bowl and add atta, salt and carom seeds.
  • Mix with hands. Add water and knead the flour to make it into a hard dough
  • Cover with fabric and let it rest for about 30 minutes.
  • Divide dough into eight portions. Roll each piece into a roti using flour as dust so that it does not stick. Roll into elongated oval shape and not circular shape
  • Roast both sides of all rotis on a tava (iron griddle) and keep aside. Do not roast fully. Roast about 60-70%.
  • Now, preheat the toaster, and roast all the rotis in the toaster one by one. This step will give the rotis tandoori roti texture and taste.
  • Serve with dal and butter.

Notes

  • Make roti early and just roast in the toaster when you are ready to serve
  • If you don’t have a toaster, you can use oven or alternately roast it on burner also
