Jafarani Pulao or Saffron Rice

This is a perfect recipe when you need something to impress. This dish, famous in the Awadhi cuisine, is infused with the rich and unique flavors of saffron and nuts. Saffron also gives the rice a beautiful color.

Ingredients

  • 2 cups basmati rice

  • 1 medium sized red onion – sliced

  • 12 flakes saffron

  • ½ cup milk

  • 1 cup mixed nuts and raisins – almonds, cashews, raisins and makhana

  • Salt to taste

  • ¼ cup ghee

  • 2 bay leaves

  • 4 cloves

  • 1 stick cinnamon

  • 4 whole black peppers – crushed

  • 1 star anise

  • 4 to 5 whole green cardamoms – crushed

Directions

  • Wash rice 4 to 5 times and soak for 15 to 20 minutes. Meanwhile, soak saffron in milk.
  • Take a fry pan and put on medium heat, add ghee in the pan then once hot, add onion. Mix until it turns brown.
  • Remove onions, and add bay leaves, cloves, black pepper, star anise and cardamom on slow heat.
  • Add mixed nuts and roast for 40 seconds.
  • Add rice and saffron milk, mix and add 2 cups of water. Stir and add salt and onions, then mix.
  • Close the lid for about 5 to 8 minutes on medium high. Stir often, but slowly, otherwise the rice will break.
  • When the rice is tender, wait for about 2 minutes, then with a fork make sure the rice is fully cooked. Always check with a fork otherwise the rice will be messy.
  • Garnish with nuts and saffron, enjoy with dal and yogurt!
  • Enjoy!
