Aloo halwa is unique and is a starch and carbs-rich dessert, typically prepared in winter and consumed during fasts like Shivratri or Navratri to provide necessary energy required by the body.  It can be prepared for any occasion and celebration ritual.

If you are looking for food options during the upcoming Navratri,  It is an excellent dish to prepare.

Ingredients

  • 1.5 cups potatoes – boiled and mashed to a smooth finish

  • 3 tbsp ghee (clarified butter)

  • 1 cup milk

  • ⅓ cup sugar or to taste

  • 6 almonds – chopped

  • 4 tsp golden raisins

  • 6 cashews nut – chopped

Directions

  • Heat fry pan on slow heat and add ghee. Wait about 30 seconds or until the ghee melts
  • Add mashed potatoes and roast for about 8-10 minutes.
  • Stir potatoes continuously while roasting otherwise, the potatoes will stick on the pan.
  • Add hot milk and mix. Keep stirring until milk evaporates (About 3-4 minutes).
  • And sugar and keep stirring till ghee separates and halwa thickness (About 2 minutes).
  • Garnish with nuts.
  • Serve hot.

Notes

  • You can select and dry fruit for garnishing as  per your preference and taste.
  • The more ghee you add, the tastier will be the halwa.
